Sugar Cookie Frosting

When the holiday season arrives, I go a little nuts with the cookie baking. To be fair, I go a little nuts with the cookie baking all year long anyway, but Christmas time gives me the perfect excuse.

With all the holiday parties, cookie exchanges and family visits, having fresh homemade cookies around is a necessity.

If I have to pick a cookie recipe to bake and share, I’ll often go with sugar cookies for one reason–frosting.

What’s a Christmas sugar cookie without a thick layer of rich creamy frosting on top? This sugar cookie buttercream frosting pairs perfectly with Cut Out Sugar Cookies, a delicious recipe from my friend In Katrina’s Kitchen,as well as my Easy Soft Sugar Cookies.

Best Tasting Sugar Cookie Icing

This frosting recipe hardens slightly as it sets on the cookies. Not only do I love the texture of biting into a big soft sugar cookie with a sugary frosting crust, the hardened icing also stays in place better than other kinds.

That means, you can stack and transport your frosted sugar cookies without worrying about the icing smearing. Not as hard as royal icing, this easy sugar cookie frosting stays in place while keeping the cookie soft and chewy.

Sugar Cookie Buttercream Frosting

It’s undeniable that using butter gives frosting recipes a great flavor. I often use real butter, or a combination of butter and shortening in myButtercream Frosting for cakes and cupcakes.

For this icing recipe I use all shortening instead, for a couple of reasons.

  1. Shortening stays stable at higher temperatures than butter so there’s less risk of your frosting getting melty.
  2. Shortening hardens at room temperature giving the cookies the “crust” I want.

The result will be similar to the frosted sugar cookies you get in the bakery section of the grocery store but with a richer, creamier taste. It’s impossible not to smile when you bite into a cooke decorated with this perfect buttercream frosting!

1. With an electric mixer, beat shortening until light and fluffy, approximately 1-2 minutes.

2. Add two cups of powdered sugar to the shortening and mix until well combined. Add vanilla and salt and mix until combined.

3.Add additional powdered sugar, one cup at a time, mixing until well combined. When mixture starts to get too thick, start adding milk, a little at a time.

4. Continue to add powdered sugar and milk until completely combined. If you would like your frosting to be thicker, add additional powdered sugar, 1⁄4 cup at a time. If you would like your frosting to be thinner, add additional milk, 1 tbsp at a time, until the desired consistency is reached.

5. If desired, add food coloring.

Decorating Cookies

If you’d like to make your frosting different colors, simply divide the icing into separate bowls before adding your desired food coloring. A few drops of red food coloring with green sprinkles and your sugar cookies are ready for Christmas. Try white frosting with pink and red sprinkles for a fun Valentine’s Day sugar cookie.

FAQs

What consistency should sugar cookie frosting be? ›

Think about the viscosity of honey or shampoo to help you gage flooding consistency. It should melt in on itself in about 10 seconds but not be so thin that it will run off the sides of the cookie. If you go too far and add too much water to your flood icing it will be too thin.

Why is my sugar cookie icing not hardening? ›

Undermix, and your royal icing looks translucent and is structurally weak. Overwhip, and you're giving too much volume to the egg proteins via air, causing the structure to weaken in a different way. Overmixed icing usually looks porous when dry, and sometimes will not even fully dry and be soft/brittle.

Do you need to refrigerate sugar cookie frosting? ›

This frosting will keep for several days at room temperature or in the fridge. To store, place your frosting in a sealed container and press a piece of plastic wrap directly against the surface. You will need to stir it before using it. Note: you may add food coloring either before or after storing.

How do you know if frosting is thick enough? ›

If you stick your spatula into the buttercream, your frosting should maintain a stiff peak. If your buttercream is too thick and can't flow through a piping tip, add more milk – about 1 teaspoon at a time – to slightly thin it out.

What are the three types of icing consistency? ›

There are three main types of royal icing: stiff consistency, piping consistency, and flood consistency. They are used for different decorating techniques, although sometimes you can use different consistencies to achieve the same result.

Should I freeze sugar cookies before frosting? ›

Sugar cookies, like most cookies, can be frozen, but if you are planning to decorate your sugar cookies with frosting, freeze before decorating. As with most cookies, you can freeze sugar cookie dough or freeze baked sugar cookies.

Why are frosted sugar cookies so dry? ›

Tips for baking soft sugar cookies

If there's too much flour, the cookies will turn out dry and they will not spread. If possible, measure the flour with a food scale. Otherwise, to ensure the exact amount, gently spoon the flour into the measuring cup and level if off with a flat edge.

How long to let sugar cookies cool before icing? ›

The warmth from the cookies will cause the royal icing to melt, cause colored sprinkles to bleed a rainbow of red and green, and make it impossible to create the Pinterest designs of your dreams. Let them sit at room temperature for at least 30 minutes so that they can fully chill.

How much icing per sugar cookie? ›

1-2 ounces of icing (varies on how much icing you prefer) is on average what we flood about a 3” cookie with.

Why does my homemade icing taste bad? ›

The starch added to most powdered sugar can make frosting taste slightly metallic. Here's how to fix that: Melt the butter and mix it with the powdered sugar, salt, and milk in a stainless steel bowl. Set the bowl in a wide skillet of barely simmering water for 5 minutes, stirring from time to time.

Why add corn syrup to royal icing? ›

Corn syrup helps give shine and also a soft-bite to your icing. Without corn syrup, your royal icing can be as hard as a rock, and no one wants to chip a tooth on a cookie. I use 1 Tablespoon of Karo Light Corn Syrup in my icing recipe. I've seen some cookiers use more but this ratio works well for me.

Do frosted sugar cookies go bad? ›

Decorated Sugar Cookies

Now for decorated cookies. If you leave them on the counter, at room temperature, they should be good to go for about two weeks.

Can you leave frosted sugar cookies out overnight? ›

Once I decorate the cookies (either the day they are baked or a couple days later), the cookies need to be left out over night to fully dry before packaging. They will not get stale from being left out one day.

What should the consistency of icing sugar be? ›

The sugar should not be at all gritty, or it will plug pastry tips when doing fine piping work. As always, it's best to weigh all ingredients for most accuracy and consistency, and to add the egg whites gradually. The icing should be very stiff coming off the mixer, at what I refer to as my “glue” consistency.

What texture should frosting be? ›

The goal for your buttercream should be a smooth, silky, easily spreadable consistency. It's this amazing consistency that makes smoothing out your buttercream while decorating so much easier.
